Eryngii namul
Eryngii mushrooms, also called king trumpet mushrooms, have a nice mild flavor. Unlike other mushrooms, they have a long and thick stem with a short cap, and very little ribs.
Eryngii mushrooms are often used in Asian dishes like hot pots, but one of my favorite preparations is as a namul (나물 in Korean). Namul is a generic name for a Korean side dish, typically a vegetable with seasoning.
I started my namul by quickly sauteing julienne onions and carrots with minced garlic in olive oil. When these were wilted and fragrant, I added sliced eryngii, seasoned with salt and pepper, and stir fried, adding sesame oil for flavor. After a minute or so, I took everything out of the pan and added sliced green onions. It made a great side for my Korean dinner.
