Tomato poke
Poke is a Hawaiian dish of seasoned, cubed raw tuna.
Having grown up in Hawaii, the flavors of poke are ingrained in my blood. For me, the classic poke is made with alae salt, ogo (seaweed), onions, green onions, and inamona (candlenut). My mom always added sesame oil to further bring out the nutty flavor and aroma. Though not traditional, this combination is the quintessential poke.
I wanted to put a different spin on fish poke, and make it with sweet tomatoes instead of fish. The result was a nice side dish that evoked the feel of poke with a twist of tart, sweet tomato.
